Food Preparation: Wash, peel, chop, and portion high-volume ingredients according to catering recipes. Mise en Place: Set up assembly lines, measure ingredients, and prep basic sauces or marinades under chef supervision. Packing & Logistics: Securely pack and load food pan carriers (Cambros), hot boxes, and service utensils into transport vehicles. On-Site Setup: Assemble temporary satellite kitchens, cooking equipment, and buffet stations at various event venues. Banquet Plating: Work efficiently on assembly lines to rapidly plate appetizers, salads, and entrees during live event service. Buffet Management: Monitor buffet lines, maintain safe food holding temperatures, and promptly replenish food pans. Scullery & Cleaning: Wash heavy catering pots, sheet pans, and rental dishes both on-site and back at the commissary kitchen.
